Cafeteria Chronicles: Englewood School District 1 (Englewood, CO)
At Englewood School District 1 in Englewood, CO, a lack of training and outdated equipment was causing challenges for the school nutrition team. After receiving their Healthy Meals Incentives (HMI) grant funding, Nutrition Services Director Nicole Withee took action by updating kitchen equipment and training staff, allowing for more efficiency in the kitchen and time to focus on crafting healthier meals for students. Another benefit of the HMI grant funding was a new hydroponic system for students to learn hands-on nutrition education. School-grown Bok choy was even featured in a new recipe for ramen that students love!
